A store cupboard abundance bowl
I love the idea of abundance bowls, which I think were coined by My New Roots to describe a bowl of healthy food – overflowing with life. It’s basically a nicer way of describing a big salad.
Before my house move last week, I decided to use up some of the bits I had in the store cupboards, combined with a couple of fresh ingredients, to create a really fantastic looking (and tasting!) abundance bowl.
I’ve listed out a recipe below, but really I think the basic idea is to just bring together loads of vegetables, with some seeds, beans and a healthy grain of some kind.
- 75g organic pearled spelt
- 3 sprigs dill
- 1 tbsp pumpkin seeds
- 1 cup chopped beetroot
- 1/4 cucumber, cubed
- 1 avocado, cubed
- 1 tomato, cubed
- 1 tbsp chopped sundried tomatoes
- 1 can cannellini beans, drained
- 1/2 lemon
- 1 tsp dijon mustard
- 1 tbsp extra virgin olive oil
Step one: Cook the spelt following the instructions on the package.
Step two: Meanwhile, put all the other ingredients apart from the lemon, mustard and olive oil into a big bowl.
Step three: Whisk together the lemon, dijon mustard and olive oil to create a creamy dressing. Pour over the salad.
Voila! This served two people as a lunch time meal.
