Recipes inspired by Pinterest
I made two amazing meals from last month’s ‘recipes inspired by Pinterest’ list – sausage and tomato gnocchi (I followed the recipe pretty strictly, apart from using regular sausages instead of chicken sausages, which don’t seem very easy to buy in the UK) and a polenta bake with mushrooms, tomatoes and feta, which I made up a recipe for.
I also found a great recipe base, which I adapted into an apple, quince and raspberry pie. Oh man, this was soooo good. Served with custard. Drooling just thinking about it…
This month, I’d like to make…
…some snack bars. I’m not sure if I’ll actually use this recipe (from Food 52), or come up with something on my own, but I feel like I need some healthy snacks for the office. I’m trying to do the ‘little and often’ technique of eating to deal with the pregnancy heartburn I’ve been experiencing, but am finding it difficult not to resort to chocolate bars or biscuits when I’m at work!
…some black bean and lentil chilli. The weather is still so lovely in London, but I’m already craving warm stews and chillis – this one from Taste, Love and Nourish looks delicious.
…I’ve also been craving pumpkins already – this pumpkin and ricotta gnocchi recipe from The Bojon Gourmet looks lush!
…And finally, I want to start making some more healthy salads for lunch, like this one from Mind Body Green. The falafel store near work makes the Most Amazing Salads ever, so I’ve been eating those a lot lately (usually without falafel – they make these incredible Ottolenghi style salads with so many different varities!). They’re brilliant, but I’m meant to be conserving money, not wasting it on lunch every day! So, it’s time to get back into the habit…
