Fruity couscous salad

There’s this couscous salad that Waitrose does that I absolutely love. It’s the Moroccan spiced fruity couscous salad. It’s £1.99, which isn’t that much, but the portion size is tiny, meaning that I always end up having to get another salad to go along with it, or have a hunk of bread alongside it.
The other day I was having a friend round for lunch and I was racking my brains for something to cook for her. I wanted something really easy, that would involve me having to leave the house, and which wouldn’t be hugely expensive. Moroccan spiced fruity couscous to the rescue! This doesn’t taste exactly like the Waitrose version, because I used what I had to hand, but it’s very delicious, and takes minutes to make. Definitely a new favourite around here! In fact, I liked it so much, I made another batch to test out the recipe and it was a hit again, this time just for me…
If you go by Waitrose’s portion sizes, this recipe serves two, but I ate this all by myself…
- 1/2 cup couscous
- 1.25 cups boiling water
- 1/2 tsp turmeric
- 1/4 tsp cumin
- Pinch of salt
- 1 tbsp dried cranberries (or raisins)
- 1 tbsp flaked almonds
- 2 tbsps chopped artichoke hearts (from a can or jar)
- 2 tbsps olive oil
- 2 cherry tomatoes, sliced in half
- 2 slices of pickled beetroot, cut into cubes
- 1/2 avocado, cut into cubes
Step one: Mix together the couscous, turmeric, cumin, salt and cranberries, then pour over the boiling water and cover for around 5 minutes.
Step two: Lightly stir in all of the other ingredients until well mixed.
That’s it. Two steps, but so many gorgeous flavours. A perfect, super speedy lunchtime treat.Keep in touch
