Happy Monday! What did you have for breakfast yesterday? I am a big pancake fan. Once every week or two on a Sunday, I mix up a batch of blueberry or raspberry pancakes for Theo and I to enjoy. I have mine with maple syrup, he has his with yoghurt. Or sometimes I make them plain and just serve them with banana on the side.
Pancakes aren’t exactly classified as a health food, but mixing them with fruit helps boost their credentials a little bit. They’re just so tasty and this recipe is literally the easiest thing in the world. Why? Because right now, I always have pancake mix in the cupboard!
I make up a big batch of this pancake mix recipe and it lasts me for absolutely ages. Plus, it’s so easy to make the pancakes afterwards, I don’t need to refer back to the recipe. I don’t have time in the mornings any more to look up recipes or cook anything that takes longer than 10 minutes to make (as I discovered to my detriment the other week when I made baked eggs, which then became microwaved eggs, because they were taking so long!), so this recipe is perfect.
One cup of mix plus one cup of milk and one egg. I also melt around 25g of butter in a saucepan and mix that in, as I think it makes them cook better. Sometimes I do a half portion, just for me or just for Theo, in which case I half the mix, milk and butter, beat the egg separately and whisk in roughly half. It just makes perfect sense to me and works out great every single time.
Each pancake is made up of around 2 tablespoons of mix, and the end result if you use a full cup of mix is 6 delicious pancakes. Plenty for mum and baby!Follow BeNourishd
